Add some greenbacks to Red Hook’s edible education project

With just over a month to go, the online fundraising effort for the edible education program in the Red Hook schools is closing in on its goal, but still needs your help.

The effort, run by Harvest Hudson Valley for a second year, hopes to fund the gardens, mobile kitchen and school lunch program. And this year, the scope of the project has been expanded beyond the Mill Road Elementary Garden Classroom. It now includes middle school and high-school students with plans to develop a cooking program and a district-wide School Lunch Initiative.

“We believe that all students in the Red Hook Central School District should have the opportunity to grow, cook and eat healthy, fresh food at school and that each stage — growing, cooking and eating — is equally important for the development of lifelong health and nutrition,” the organization said in a news release.

In addition to the Mill Road Garden Classroom, which will have more than 20 classes working in the garden weekly, the project also involves creating more curriculum-based garden lessons for teachers as well as creating a district-wide Cooking Classroom program for the fall 2013, where students at all grade levels will learn basic cooking skills and receive nutritional lessons with the help of local chefs.
